Ingredients

  • Gravy:
  • 2 TBS vegetable oil
  • 6 bone-in pork chops (1-in thick) salt and peppered
  • 1/2 cup all-purpose flour
  • 4 TBS vegetable oil
  • 4 TBS all-purpose flour (from dredging)
  • 1 1/2 cups milk
  • 1 tsp ground sage
  • salt to taste (1/2 tsp)

Preparation

Step 1

Preheat oven to 425 degrees. Line a cookie sheet with aluminum foil and spray with cooking spray.

Heat vegetable oil in large skillet over medium heat. (Electric skillet, 400 degrees)

Dredge each pork chop in flour. Shake off excess. Sear pork chops until browned (about 5 minutes each side). Transfer to cookie sheet. Roast chops in oven 10 minutes (or until cooked throughout). Remove from oven and let rest.

For Gravy: Heat oil in large skillet over medium heat. Whisk in 1/4 cup of flour from dredging. Gradually stir in milk. Whisk until smooth and thickened. Stir in sage and season with salt. If gravy becomes too thick, add more milk to desired consistency.
