Apple Filling

This filling is good for turnovers, Danishes or coffeecakes. You can dress up the apples with any dried fruit you like, or chopped nuts.

Ingredients
- 12 ounces cooking apples,* peeled, cored, thinly sliced, then cut into 1/2-inch pieces
- 1 tablespoon lemon juice
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 3/4 teaspoon allspice
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1/4 cup cold water
- 1/3 cup raisins, dried fruit or nuts

Step 1
Place the apple slices in a medium-sized saucepan with the lemon juice, sugar, spices and salt. Cover and bring to a simmer over medium heat; cook for 5 minutes. Meanwhile, mix the cornstarch with the cold water until smooth. Pour this mixture over the simmering apples and return to a simmer, cooking until the filling thickens and bubbles in the center, about 30 seconds. Remove from the heat and, if you ar using any of the optional ingredients, stir them in. Cool before using.
