  • 2 c. all-purpose flour
  • 1 tsp. ground cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1 c. vegetable oil
  • 1/2 c. granulated sugar
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1 1/2 c. grated zucchini (from 2 medium)
  • 1 c. grated carrots
  • 1 c. crushed pineapple, drained
  • 1/2 c. raisins

Step 1

Preheat oven to 350° and grease a loaf pan with cooking spray. In a large bowl whisk together flour, cinnamon, baking powder, baking soda, and salt.
In another large bowl stir together oil, sugar, eggs, and vanilla. Add zucchini, carrot, pineapple, and raisins. Add dry ingredients and stir until just combined.
Pour batter into loaf pan and bake until a toothpick inserted into the middle comes out clean, about 1 hour 15 minutes. Let cool completely before serving.
