Ingredients

  • 20 small new potatoes or 4-6 medium russet potatoes, scrubbed
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced
  • 1 Tbls. extra virgin olive oil
  • 1 cup shredded cheddar or pepper-jack cheese
  • 1 cup sour cream
  • 1 tsp salt
  • 1/2 tsp pepper

Step 1

Bake potatoes at 400F for 40-45 mins (or microwave 6 mins) until tender. Let stand until cool enough to handle.
Cut potatoes in half. Using a melon baller or small spoon, scoop out most of the flesh, taking care not to tear the skins, and put flesh in bowl. Place potatoes on baking sheet. Coarsely mash the potato flesh in the bowl, and stir in the cheese, bacon, green onions, sour cream, 1 tsp salt and pepper.

Stuff potato skins with the mashed potato mixture. Bake the skins for 15-20 mins at 400F until golden brown on top.
