Ingredients
- 3 whole wheat english muffins, split and toasted
- 12 ounces Canadian Bacon
- 1 1/4 cups sharp cheddar cheese, shredded
- 1/3 cup Parmesan cheese, finely shredded
- 8 large eggs
- 3 cups milk
- 1 1/2 T. Dijon mustard
- 1/4 t. hot sauce, optional
- 1/2 t. salt
- pepper to taste

Preparation
Step 1
Butter a 9 x 13 inch baking dish. In dish, alternately arrange, cut side down, muffin halves, and Canadian Bacon. Sprinkle with cheddar and Parmesan cheeses. In large bowl, whisk together eggs, milk, mustard, salt, a pinch of pepper and hot sauce until combined. Pour over muffins and bacon; cover tightly and refrigerate at least 2 hours or overnight. Preheat oven to 350.
Bake until puffed and set in the center, about 1 1/2 hours. Let stand 10 minutes before cutting and serving.
