Ingredients
- 1 c plus 2 tbsp butter
- 2 1/4 c powdered sugar
- 3/4 c plus 2 tbsp evaporated milk
- 2 tsp vanilla
- 1 tsp salt
- 2 c flour
- 28 caramels
- 1 c salted pecans, coarsely chopped
- 1 12 oz. package of chocolate chips

Preparation
Step 1
For dough:
Cream 3/4 c butter, gradually adding 3/4 c powdered sugar. Add 2 tbsp milk, 1 tsp vanilla and 1/4 tsp salt. Mix well. Blend in flour. Roll out dough to 1/4" thickness. Cut with cookie cutter. Bake at 325 degrees F for 12 minutes.
Caramel Filling:
In double boiler, combine caramels and 1/2 c evaporated milk. Heat until caramels melt. Remove from heat and add 1/4 c butter and sugar. Mix well. Stir in pecans and let cool.
Icing:
Melt chocolate chips with 1/4 c evaporated milk in saucepan over low heat. Remove from heat and add 1 tsp vanilla, 2 tbsp butter and 1/2 c powdered sugar.
To assemble, spoon caramel filling on cookies. Top with icing.
