Ingredients

  • 5 Lg Zucchini
  • 1 t salt
  • 2-3 cloves garlic
  • 2 T Olive Oil
  • 1 8 oz. pkg cream cheese, cubed and softened
  • 3/4 cup 1/2 & 1/2
  • 1/2 cup parmeson
  • ground pepper
  • group nutmeg

Step 1

Cut Zucchini in half, cross cut lengthwise into 1/4 slices and then length wise into long thin strips about 1/4" wide. You should have about 8 cups. In a large colander toss zucchini with salt & drain.

In a 12" skillet cook the zucckini for 2-4 min tender crisp Trans mix to large bowl.

In skillet heat cream cheese and 1/2 & 1/2 over medium low heat until smooth. Stir in 1/2 cup parmesan. Stir in zucchini, sprinkle with pepper, nutmeg, & Parmesan.
