  • Crust:
  • 1 1/2 cups finely crushed graham crackers
  • 3 Tbsp. melted unsalted butter
  • Filling:
  • 32 oz cream cheese (room temp.)
  • 4 eggs
  • 1 1/4 cups sugar
  • 1 1/2 tsp. lemon juice
  • 2 tsp. vanilla extract
  • Topping:
  • 2 cups sour cream
  • 1/4 cup sugar
  • 1 tsp. vanilla

Step 1

preheat oven to 350 degrees
grease the 9" spring-form pan

for crust:combine the graham crackers crumbs with the melted butter
press into the bottom only of pan

for filling: beat cream cheese in large bowl
add eggs, sugar, lemon juice, and vanilla and beat thoroughly until very smooth
pour over the crush into the pan

bake 50-55 mins.
remove from oven and let cool for 15 mins.

for topping: combine the sour cream, sugar and vanilla
when the cake has finished baking, spoon topping over the top of the cake and return to oven for 5 mins
let cake cool completely, then refrigerate for 24-48 hours
