Ingredients

  • Icing:
  • 1-3/4 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3-4 over ripe bananas
  • 1 cup oil
  • 1 teaspoon vanilla
  • 3 tablespoons milk
  • 1 teaspoon vinegar
  • 1/2 teaspoon all spice
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1-1/2 cups sugar
  • 1 cup pecans, chopped, toasted
  • 1 tablespoon margarine
  • Salt
  • 1- 8 oz. cream cheese, softened
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla
  • 1 box confectioners sugar

Preparation

Step 1

Sift together, flour, salt, baking soda, baking powder, Place bananas, oil, vanilla, milk, vinegar, all spice, cinnamon, eggs and sugar in blender and blend just until blended.

Pour blended mixture over flour mixture and stir until blended. Pour into 9 x 12 pan and bake at 350 degrees for 30 minutes until cake springs back when touched in middle.

Icing:

Place pecans in oven with about 1 tablespoon margarine and sprinkled with salt until toasted, cool.

With mixer, whip cream cheese, milk, vanilla and confectioners sugar, when blended, stir in cooled pecans and spread over cooled cake.
