  • Filling:
  • 4 cups flour
  • 1 cup sugar
  • 6 t. baking powder
  • 1 t. salt
  • 2 eggs
  • 2 cups milk
  • 1/2 cup butter, melted
  • 2 cups fresh or frozen blueberries
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 egg
  • 1/3 cup sugar
  • dash salt

Preparation

Step 1

In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, beat the eggs, milk and butter; stir into dry ingredients just until moistened. Fold in the blueberries. Spoon about 2 rounded tablespoonfuls into greased muffin cups.
In a small mixing bowl, beat cream cheese, egg, sugar and salt; place about 1 T. in the center of each muffin cup (do not spread). Top with remaining batter. Bake at 375 degrees for 18-20 minutes or until a toothpick inserted in center comes out clean.
