Ingredients
- 1 green pepper; cut into strips
- 1 rib celery; minced
- 1/2 small onion; minced
- 1 teaspoon olive oil
- 1 cup fresh tomato; diced
- 1 small bay leaf
- 1/2 teaspoon fresh thyme; minced
- 1 pinch ground clove
- 1 dash tabasco sauce
- 1 Salt and pepper to taste
- 1/2 pound sole, flounder or other white fillet

Preparation
Step 1
Saute pepper, celery and onion in olive oil until tender but not brown.
Stir in tomato, bay leaf, thyme, cloves, tabasco, salt and pepper. Simmer
gently 5 - 10 minutes. Discard bay leaf. Coat shallow nonstick pan with
spray and arrange fish in pan. Spoon sauce over fillets. Bake, uncovered,
about 10 minutes at 375 °F until fish flakes easily with a fork.
