Ingredients

  • 12 oz. hot Italian sausage, cooked and chopped (or 2 cups diced cooked ham)
  • 1/2 Cup chopped green onion
  • 10 eight inch flour tortillas
  • 2 Cups grated cheddar cheese (save the extra cheese for topping)
  • 8 large eggs
  • 2 Cups half & half
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper (if using ham, you might want to add some
  • red pepper flakes)
  • 1 tsp. dry mustard
  • Topping: Approx. 1 cup each sour cream and salsa, and
  • remaining cheese.
  • Garnish: 2 chopped avocados

Preparation

Step 1

1. Sprinkle sausage (or ham) and onions evenly down center of each tortilla; top

each with 2 TBSP cheese. Roll up tortillas and place seam side down

in a lightly greased 13 X 9 baking dish.



2. In a large bowl, beat the eggs until light and frothy. Stir in half and half, salt,

pepper, and mustard and blend well. Pour mixture evenly over tortillas, cover

and chill for at least 10 hours.



3. Remove pan from frig and let stand at room temp for 30 minutes.



4. Bake covered @ 350 for 35 - 40 minutes. Uncover and bake another 10-15

minutes or until set. Spread sour cream, salsa and cheese on top and

bake another 5 minutes or until cheese melts.. Let stand 10 minutes before

serving. Garnish with the chopped avocados and enjoy!
