This is the filling of choice for Black Forest Cake, which features a combination of cherries and chocolate.

Ingredients
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1/4 cup water
- 1/4 cup cherry brandy, white wine or water
- 3 to 4 cups pitted fresh or frozen cherries (about 2 pounds unpitted)
- 1 cup (6 ounces) dried sour cherries

Mix all the ingredients together in a medium-sized saucepan, bring to a boil over medium-high heat, and cook until thickened, adding additional sugar to taste.
