Cream Cheese Frosting

This frosting is rich, but not overly sweet, and spreads beautifully. It's the perfect compliment for carrot cake, of course, but also very nice on Apple cake.

Ingredients
- 6 tablespoons (3 ounces) unsalted butter, at room temperature
- 1 package (8 ounces) cream cheese, softened
- 1 teaspoon vanilla
- 4 cups (1 pound) powdered sugar
- 1 cup chopped nuts (optional)
- 1/2 cup minced crystallized ginger (optional)
- 2 to 4 tablespoons milk, to make frosting spreadable

Step 1
Combine the butter, cream cheese and vanilla in a medium-sized bowl and beat them together until they are light and fluffy. Add the sugar gradually, beating well. Stir in the nuts and/or ginger, then beat in the milk, a little at a time, until the frosting is spreadable.
