Ingredients

  • 5 pounds red potatoes
  • 4 or 5 eggs, hard-boiled and cooled
  • 2 cups Miracle Whip Salad Dressing (not mayonnaise)
  • 1 large onion, diced
  • 2 green onions, thinly sliced
  • 3 stalks celery, thinly sliced
  • 3/4 cup sweet relish
  • 2 tsp dry mustard
  • 1/3 cup chopped parsley
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • Paprika

Preparation

Step 1

Bring a large pot of water to a boil. Add potatoes, and cook for 15 to 20 minutes, or until tender but still firm. Drain, cool and cut into small cubes.

Peel and chop the cooled, hard-boiled eggs.

In a large bowl, combine chopped potatoes and chopped eggs.

Mix together salad dressing, chopped onion, green onion, celery, sweet pickle relish, dry mustard, and chopped parsley. If mixture doesn't seem moist enough, add a little more salad dressing to suite your taste.

Season with salt and pepper, then mix well.

Sprinkle with paprika.

Cover, and refrigerate for several hours or overnight.
