Shrimp Fried Rice

Fried rice is a staple at any Asian restaurant, and the great thing about it is that you can change it up to suit your tastes. Don't like shrimp? Substitute chicken, or beef, or fish; you can even just go with no meat. Throw in your favorite vegetables and you have a simple meal that is ready in under 30 minutes!

Ingredients
- 2 cups instant white rice (or brown)
- 20-25 small shrimp
- 1 onion (diced)
- 1 red pepper (diced)
- 1 can mixed peas and carrots (drained)
- 1 egg
- 1 clove garlic (minced)
- 1/4 cup soy sauce (optional)
- 2 tablespoons Oil

Preparation
Step 1
Boil water for your rice and cook as directed. Set aside. In a large saucepan, saute your onion and pepper in a small amount of oil until softened. Add in your canned vegetables and heat through. Turn heat off and set aside. In another pan, cook your shrimp and garlic in some oil for just a few minutes, until shrimp are pink. Mix in vegetables. Stir well. Keep heat on and add your egg into the pan. Scramble quickly and incorporate with vegetable/shrimp mixture. Add in soy sauce and rice. Stir well. Serve hot.
