No-Bake Pineapple Cheesecake (GF)

Ingredients
- 3 tbsp. GF cookie crumbs
- 2 cups low-fat plain yogurt
- 2 tsp. powdered vanilla
- 1 egg or 1/4 cup liquid egg substitute
- 2/3 cup sugar
- 1/4 cup GF Flour Mix (or cornstarch)
- 1 (8oz) pkg. cream cheese
- 1 (8oz) can crushed pineapple (undrained)
- 1 tbsp. cornstarch

Preparation
Step 1
1. Spray a 9-inch pie plate with vegetable oil spray. Sprinkle in the cookie crumbs.
2. In food processor (or with a heavy beater), blend the yogurt, vanilla, egg, sugar and flour mix. Cut up the cream cheese and add gradually. Blend until smooth. Pour into a microwave-safe bowl.
3. Microwave on High for 8-10 minutes, stirring every 2 1/2 minutes, until the custard is the consistency of thick pudding. Remove and stir until smooth. Pour gently into the pie plate. Let cool while making topping.
4. Combine the pineapple (with juice) and the cornstarch in a microwave-safe bowl. Microwave on High for 1 minute or until boiling, stirring once. Boil 1 minute. Spread over the cheesecake and refrigerate for 3 hours before serving.
