Ingredients

  • 2

    packages (7 ounces each) Kabuli small pizza crusts

  • Extra virgin olive oil

  • ½

    pound smoked salmon or cooked turkey bacon (cut into 1½ inch pieces)

  • ½

    cup Parmigiano Reggiano cheese

  • 4

    large eggs

  • Salt and freshly ground black pepper

  • Snipped fresh chives or capers for garnish

Directions

Position rack in the middle of the oven and preheat to 400°F. Place aluminum foil on a large cookie sheet. Place the pizza crusts on the cookie sheet and brush the tops lightly with olive oil. Bake in oven for 2 minutes. Remove crusts from oven and layer smoked salmon or turkey bacon and Parmigiano Reggiano on crusts. Crack eggs into a small cup, one at a time, to prevent breaking yolks and slide one egg onto the center of each pizza. Bake in 400°F oven for 11 to 12 minutes or until egg whites are set and the yolks are glazed over but still soft. Slide each pizza onto an individual plate, garnish with chives or capers and serve at once with a fruit salad or green salad.
