Thin and Crispy Gourmet Hula Pizza

I don't think I'm capable of writing a book without including at least one pizza. I mean, come on-ti's not American to completely give up pizza! By using a low-fat whole wheat tortilla as the crust (please do not attempt this recips with a low-carb tortilla), you can enjoy a thin and cripy pizza without guilt. Once you've mastered the pizza, feel free to create your own thin and cripsy pizza with Main Event Marinara Sauce, low-fat cheese, and plenty of lean protein and veggies. Your kids can even assemble their own. It's eally fun to make individual pizzas with the whole family.

Ingredients
- 1 (about 8") low-fat whole wheat flour tortilla
- 2 tbsp traditional barbecue sauce (7 g carb or less per
- 2 tbsp)
- 3/4 oz (about 3 tbsp) goat cheese crubles
- 3 tbsp drained canned diced pineapple in juice, or
- drained pineapple rings in juice chopped into bite-
- sized pieces
- 1 1/2 tsp finely chopped cilantro, or more to taste

Step 1
Preheat the oven to 400.
Place the tortilla on a medium nonstick baking sheet. Bakde for 2-4 minutes per side, or until crisp. If air bubbles form while baking, poke them with a fork, then use a spatula or oven mitt to carefully press the air out.
Remove from the oven and top evenly with the sauce, then the cheese, pineapple, and cilantro. Bake the pizza for 3-4 minutes longer, or until the cheese is completely melted. Slice into 8 wedges and serve.
