Ingredients
- For Topping:
- 3 eggs
- 1 tbsp. cornstarch
- 1 tbsp. potato starch
- 3 tbsp. milk
- Pinch of salt
- 1/4 tsp. vanilla flavouring
- 1/4 cup jam and/or 2 tbsp. sugar

Preparation
Step 1
1. In small-medium bowl, combine all ingredients. Mix until eggs are fully incorporated and no lumps remain.
2. Heat a 5-6 inch frying pan to medium heat. Move pan from heat, spray with nonstick spray or add a bit of butter, and return to heat.
3. Pour 1/8 to 1/4 cup batter into pan. Swirl pan to move batter over bottom of pan until batter begins to set.
4. Cook about 1 minute, until batter is fully set. Flip crepe over and cook on other side for about 30 seconds.
5. While still warm, fill crepes with a bit of jam, fold in thirds, and top with a small amount of sugar. Serve warm if possible.
