Ingredients
- 4 quarts small diced tomatoes
- 4 large onions
- 6 large green peppers
- 4 pods hot pepper (if desired)
- 2 cups white vinegar
- 2 12 oz. cans tomato paste
- 1 tablespoon chili powder
- 2 tablespoons cumin
- 1 teaspoon alum
- 1/3 cup salt
- 1 teaspoon garlic
- 1 teaspoon onion powder
- 2 teaspoons black pepper
- 2 teaspoons of dried cilantro or 1/4 cup fresh cilantro
- 3 tablespoons sugar

Step 1
Mix ingredients and boil for 1 hour. Be careful not to burn or scorch.
Note that the cilantro changes the taste tremendously.
