Ingredients
- 1 pound lean ground beef
- 1 medium onion, chopped
- 1 small green pepper, chopped
- 2 large garlic cloves, minced
- 1 (14 1/2 to 16 ounce) can tomatoes
- 2 tablespoon chili powder for more, if desired
- 1/2 teaspoon salt
- 1 can kidney beans (or pinto beans)

Step 1
In a 2 quart saucepan, cook ground beef, onion, green pepper and garlic over medium heat until onion is tender, about 10 minutes. Add tomatoes and their liquid, chili powder and salt. Heat to a boil. Reduce heat to low, cover and simmer 1 hour, stirring constantly. Stir in beans and their liquid; heat thoroughly.
Serve in soup bowls with a choice of accompaniments (minced onion, chopped coriander, fresh chiles, shredded Monterey Jack or cheddar cheese.
