Ingredients

  • 1 cup chopped pecans
  • 1 cup light or dark brown sugar
  • 1/2 cup flour
  • 2 eggs
  • 1 stick melted butter
  • Whipped cream
  • Cinnamon sugar

Preparation

Step 1

Preheat oven to 350 degrees and line muffin pans with baking cups to fill 9 holes. Coat with cooking spray.

Combine pecans, sugar and flour in large bowl and make a well in center of mixture.

In a separate bowl, beat eggs until foamy. Add butter, then pour into dry ingredients and stir until just moistened.

Spoon batter into baking cups, filling 2/3 full. Bake for 20-25 minutes or until a toothpick inserted into center comes out clean.

Remove from pans immediately and let cool. Top with whipped cream and sprinkle with cinnamon sugar.
