Ingredients
- 4 Pounds fresh spinach or frozen thawed
- 1 to 2 Tablespoons butter
- 1/2 Cup diced onion
- 1 Teaspoon chopped garlic
- 2 1/2 Cups heavy whipped cream
- 2 Teaspoons salt
- 1/8 Teaspoon black pepper
- 1/8 Teaspoon nutmeg
- 8 Oz cream cheese, diced
- 1/4 Cup plus 1 Tablespoon grated Parmesan cheese

Preparation
Step 1
Remove moisture from spinach. Saute butter, onions and garlic for one minute. Add cream. Bring to boiling point and reduce heat to medium. Cook for 6 to 8 minutes. Add salt, pepper and nutmeg. Add dry, spinach and heat. Cut cream cheese into small pieces and add to spinach mixture. Add ¼ Cup Parmesan and blend. Cook spinach 20 to 25 minutes, stirring. Pour spinach into bowl and add the Parmesan cheese.
