Ingredients

  • 2 chicken breasts
  • 1/4 C bread crumbs
  • 1/4 C grated Romano-Parmigiano cheese
  • salt and pepper to taste
  • 1 egg, beaten
  • 2 t water

Preparation

Step 1

Whisk together the egg, and the water. Pound out chicken breasts to about 1/2-inch thick. Mix bread crumbs, cheese, salt and pepper. Dip the chicken in egg, and cover with mixture. Brown in frying pan on medium high, with a little bit of oil. Cook until golden brown (place in oven on 350 to finish cooking if needed.

Sauce
Take any canned spaghetti sauce and heat in a sauce pan. Add heavy cream (try cottage or ricotta cheese) until it is a milky orange color, add 2 tsp of sugar, lower to low heat and let it reduce. Once you get it to your desired consistency, spoon it over the chicken on the plate.
