Corn & Black Bean Salad

Ingredients
- 4 ears of corn (or 4 cups frozen corn, thawed)
- Red onion, sliced
- 1 can black beans,rinsed & drained (can also use cannellini beans)
- 20 or so grape tomatoes, halved
- 1/2 yellow pepper, diced
- 1/2 red pepper, diced
- Juice of 1 or 1-1/2 limes
- Fresh basil
- 4 T. (or more) red wine vinegar
- Salt & pepper to taste
- Chopped green onions

Preparation
Step 1
Cut corn of ears and saute in small amount of olive oil along with red onion slices.
Add remaining ingredients, mix well and refrigerate.
***Version 2: Corn & Tomato Salad-- Saute 1/2 cup red onion in 1 T.olive oil; add corn and saute 5 min. Remove from heat; add tomatoes, fresh basil, 3 T. red wine vinegar, salt & pepper. Sprinkle 2 oz. goat cheese crumbles over; serve at room temp.
