Ingredients
- (BREADING):
- 6-8 chicken strips, pounded flat
- 4-6 slices mozzarella cheese
- pasta sauce
- cooked spaghetti
- 1 cup oyster crackers
- 1/3 cup ritz crackers
- 3/4 cup parmesan cheese, grated
- 1/3 cup flat leaf parsley, chopped
- 1/2 teaspoon italian seasoning
- 1 teaspoon garlic powder
- 1 large egg
- 1 cup milk

Preparation
Step 1
Start by placing each chicken strip between wax paper and pound lightly until thin and flat. Set aside.
Place milk in a shallow bowl. In another bowl combine crackers, cheese, parsley and seasonings. Dip chicken in flour, then milk and then breading; coat well on both sides.
Preheat a large frying pan with olive oil and fry the chicken until cooked through and golden brown. Preheat the broiler.
To serve, place a piece of mozzerella cheese on 2 strips of chicken and place under the broiler. Serve atop cooked spaghetti and top with pasta sauce.
