Ingredients

  • Caramel Icing:
  • 1/2 cup butter
  • 1 cup sugar
  • 1 eggs (use 2 if to dry)
  • 1 cup milk
  • 1 cup coconut
  • 3 tablespoons flour
  • 1 teaspoon baking powder
  • 1/4 tsp. salt
  • 2 cups graham wafer crumbs
  • 1 teaspoon vanilla
  • 1/2 cup brown sugar, packed
  • 2 tablespoons milk
  • 1/4 cup butter
  • 1/2 teaspoon vanilla
  • 1 1/2 cups icing sugar

Preparation

Step 1

Cream, butter, egg, sugar and vanilla. Add the remaining ingredients together. Stirring well to blend.
Pack into greased 9x9 inch pan.

Bake in a preheated oven 350° for 30 - 40 minutes.
Serve plain or frost with Caramel icing.

*Icing:* Heat brown sugar, milk and butter in a medium saucepan until it boils. Boil for 2 minutes. Remove from heat. Cool a bit. Add icing sugar and vanilla. Beat until smooth. Add more milk to icing sugar until spreading consistency is reached.
