Ingredients

  • 4 large green pepper
  • 1/3 cup rice
  • 1 pound ground sirloin
  • 3 tablespoon olive oil
  • 1 medium onion; chopped
  • 1 clove garlic; minced
  • 1 stalks celery; chopped
  • 2 small mushroom
  • 1 tablespoon olive oil
  • 1 tablespoon parsley
  • 1 teaspoon Salt
  • 1 teaspoon oregano
  • 1 teaspoon tarragon
  • 1/2 teaspoon black pepper
  • 8 oz tomato sauce
  • 1/4 cup red wine
  • 1 tablespoon worcestershire sauce
  • 1/2 cup Italian bread crumbs
  • 4 teaspoon ketchup

Preparation

Step 1

Cut top from peppers and use spoon to gently scrape out seeds and white
portions of the ribs. Wash and set aside.

Cook rice, drain, and set aside.

Heat 2 tablespoon olive oil in large skillet, add the ground beef and
brown. Set aside.

Melt butter, along with the olive oil, and add onion, garlic, celery,
muchrooms, and spices and saute until tender, about five minutes. Add
tomato sauce, worcestershire sauce and wine. Simmer five minutes and then
remove from heat.

In large mixing bowl blend beef and rice and stir in tomato sauce mixture
and blend well. Gradually add the bread crumbs and mix well. Stuff the
peppers with the beef mixture, pressing the mixture firmly into the
peppers. Spread the top of each with a generous teaspoon of ketchup. Place
in a glass baking dish and bake for 45 minutes at 350 °F.
