Step 1
Preheat a lightly oiled griddle over medium-high heat.
Combine flour, sugar, baking powder, baking soda and salt. Make a well in the center. In a separate bowl, beat together egg, milk and oil. Pour milk mixture into flour mixture. Beat until smooth.
Pour or scoop the batter onto the hot griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Very helpful tips/suggestions from reviews of this recipe available on website. *One reviewer said to refrigerate the batter for a while (20-30 minutes) to allow the gluten to settle down and let the baking powder start to act, resulting in fluffy pancakes. Also, do not stir before using as this pops all the little bubbles created from the "sitting". Several added 1/2-1 teaspoon vanilla and/or cinnamon to the batter. **One reviewer stated that the batter stores well in a container in the refrigerator so that you can make just as much as you want and save some for another day.
