Ingredients

  • 1 1/2 sticks butter, ujnsalted, softened
  • 1 1/2 cups sugar
  • 2 eggs, beaten
  • 1 tblsp vanilla
  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups white all purpose flour
  • 2 teas baking soda
  • 1 teas salt
  • 2 tblsp ground flaxseed
  • 1 tblsp ground cinnamon
  • 1 teas ground nutmeg
  • 3 cups grated zucchini
  • 1 cup golden raisins

Preparation

Step 1

Preheat oven to 350.

Using the whiska ttachment of a food mixer, cream the butter and sugar on high speed for 2 minutes. Reduce speed and fold in eggs and then vanilla.

In a separate bowl, whisk together flours, baking soda, salt, flaxseed, cinnamon, and nutmeg.

Gradually pour the dry ingredients into the wet ingredients and slowly combine on low speed. Do not overmix.

Fold in zucchini and raisins.

Using an ice cream scoop distribute the dough evenly into muffin tins prepared with vegetable spray.

Bake until just cook through. The total baking time is approximately 25 to 30 minutes for standard sized muffins.
