Ingredients
- 1 can Libbys corned beef
- 1/4 cup homemade sofrito
- 1 packet Goya sazon
- 1 cup canned Spanish-style tomato sauce
- 1 tablespoon garlic powder
- 1 teaspoon vegetable oil
- 4 medium cooked potatoes red or white

Preparation
Step 1
Mash corned beef into sauce pan. Add 1/4 cup sofrito, sazon, tomato sauce, garlic and oil. Add 1/2 cup water and mix well.
Add an additional 1/2 cup water and add potatoes (slice like making french fries) mix well.
Add more water if you wish. You don't want the mixture to look soupy but more like a stew. Bring to boil then lower to a simmer for 15 to 25 mins. or until potatoes are soft. Stir while cooking.
