Ingredients
- 1 lb. ground beef
- 1 onion, chopped
- 1 (14 oz.) can red kidney beans, drained
- 1 pkg taco seasoning mix
- 1/4 t. salt
- 1 head lettuce, cut in pieces
- 4 oz. cheddar cheese, shredded
- 1 c. Thousand Island dressing (I don't use this)
- 1 pkg. tortilla chips
- 1 large avocado, sliced
- 4 tomatoes, cut into small wedges

Preparation
Step 1
Brown ground beef and onions in a skillet. Add beans, taco seasoning mix and salt. Cover and simmer 10 minutes. Combine lettuce, cheese, dressing, chips, avocado and tomato wedges; reserving a few chips, avocado and tomato for garnish. Add ground beef mixture and toss lightly. Place salad into serving bowl and garnish top and sides with reserved chips, avocado and tomato wedges.
