The Art of Drummies - Oven Baked Chicken Drumsticks

This is about as easy as a recipe can get. Just wash, dry, season and cook in a high oven. Then you will have crispy goodness.

- 5-6 Chicken Drumsticks (about 1-1/2 lbs.)
- Kosher salt and pepper
- Use fresh--not previously frozen chicken. The "dead giveaway" to frozen chicken is a red bone.

Preparation
Step 1
1. Preheat oven to 425 degrees convection.
2. Wash drumsticks under running water and pat dry with paper towels. Trim off any extra skin and any loose joint pieces.
3. Season to taste.
4. Place chicken on a prepared pan with the thicker part of the drumstick to the outside. Line the pan with aluminum foil for easier clean-up. A rack elevates the chicken to help all sides cook evenly. Of course, a heavy spray of PAM on the rack.
5. Cook to 185 degrees plus internal temperature. DO NOT STOP SHORT of 185 degrees. Let sit for 10 minutes before serving. They are way too hot to eat right away and will be better after a rest.
*If using a regular oven, preheat oven to 450 degrees. Keep the rack in the middle of the oven and do not crowd the pan.
Note: Be sure to use a "Baking Rack". If using a cooling rack, be sure it is oven-safe.
Tips:
DO NOT skip the wash and dry or you will not have crispy skin.
Season as you want.
Cook the chicken on a rack.
Brush with your favorite BBQ sauce the last 5 minutes to make great oven baked BBQ drumsticks.
