Ingredients
- 24 oz jar mild salsa
- 15 oz can black beans, drained
- 16 oz multicolored fusilli pasta
- 1 cup shredded low-fat Monterey Jack cheese or shredded low-fat cheddar cheese
- 1 cup fresh cilantro
- 1 cup fat free sour cream, if desired

Preparation
Step 1
Bring 4 quarts of water to a boil in a 6-quart pot. Pour the jar of salsa into a 1 quart saucepan. Add the beans, simmer on low heat for about 10 minutes, stirring occasionally. Add the pasta to the boiling water, stir, cook pasta for 12 to 15 minutes, or according to package directions. Drain the pasta and return to pot. Add the salsa and beans to the pasta. Serve with shredded cheese and cilantro.
