Ingredients
- 2 Cups Quinoa
- 4 Cups Stock or Water
- 1 Cup Diced Cucumber
- 1 Cup Diced Tomatoes
- 4 Tablespoons Diced Red Onion
- 4 Green Onions, thinly sliced
- 4 Tablespoons Chopped Cilantro
- 1 Small Jalapeno, chopped
- 6-7 Tablespoons Extra Virgin Olive Oil
- 2 Tablespoons Fresh Lemon Juice
- Salt & Pepper to taste

Step 1
Cook the quinoa according to package directions, using the stock or water. In a large bowl, combine the quinoa with all of the remaining ingredients. Toss to mix thoroughly. Serve chilled.
