This is a very flavorful, simple dish. If you put the fish in the marinade in the morning, you'll have a quick weeknight dinner.

Ingredients

  • MARINADE:
  • 1/4 cup olive oil
  • 2 garlic cloves, finely chopped
  • 2 teaspoons grated orange zest
  • 2 tablespoons grated peeled fresh ginger
  • 1/2 bunch fresh cilantro, leaves only, chopped
  • 6 6- to 8-ounce very fresh bluefin or yellowfin tuna steaks,
  • 1 1/2 to 2 inches thick
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Citrus Aioli
  • 6 fresh cilantro sprigs, for garnish

Preparation

Step 1

• Place the olive oil, garlic, orange zest, ginger, and cilantro in a large glass or ceramic bowl and stir to combine. Add the tuna, cover, and refrigerate for 4 hours, or overnight.

• Prepare the grill or preheat the broiler.

• Sprinkle the tuna with the salt and pepper, place about 3 to 4 inches from the heat source, and grill or broil for about 5 to 6 minutes per side; the tuna should still be rare.

• Drizzle with the aioli and garnish with the cilantro sprigs.
