Classic Carrot Bran Muffins

Ingredients
- 300 ml 1 1/4 cup all-purpose flour
- 7 ml 1 1/2 tsp baking powder
- 5 ml 1 tsp ground cinnamon
- 2 ml 1/2 tsp ground nutmeg
- 2 ml 1/2 tsp baking soda
- 1 ml 1/4 tsp salt
- 375 ml or 1 1/2 cup Cereal All-Bran* Original cereal
- 300 ml or 1 1/4 cup milk
- 50 ml or 1/4 cup vegetable oil
- 75 ml or 1/3 cup molasses
- 1 egg
- 250 ml or 1 cup grated carrot
- 125 ml or 1/2 cup raisins

Preparation
Step 1
1. Combine flour, baking powder, cinnamon, nutmeg, soda and salt. Set aside.
2. In large bowl, combine cereal and milk. Let stand for 4 minutes or until cereal is softened. Add oil, molasses and egg. Beat well. Stir in carrots and raisins.
3. Add flour mixture, stirring just until combined. Prtion batter evenly into 12 lightly-reased muffin pan cups.
4. Bake at 200°C (400°F) about 20 minutes or until firm to the touch.
