Ingredients

  • 1 lb 17 bean & barley soup blend or 13 bean soup blend
  • olive oil
  • onions
  • garlic
  • celery
  • carrots
  • turnips
  • parsnips
  • celery root
  • potatoes
  • 2 bay leaves
  • tomato sauce
  • salt
  • pepper
  • cayenne pepper

Preparation

Step 1

Follow instructions on pkg for soaking beans or just plan to cook beans for longer amt of time
Can follow ingredient list on pkg-& add others to taste
Chop vegetables in food processor
Saute veg in olive oil
Add beans, water to cover & bay leaves
Simmer for about 1 hour, add salt, pepper, cayenne, a few potatoes chopped very small, abt 1/2 cup tomato sauce; simmer 2 more hours; taste occasionally & add seasonings (esp salt) to taste
Can use stick processor to puree if smoother consistency is desired
Cook small pasta shape separately, add to soup
Store pasta separate from soup unless you want it to thicken soup during storage
