Ingredients

  • 2 cloves garlic, minced
  • 1/2 cup wine vinegar
  • 1/2 cup white wine or sherry
  • 1/2 cup water
  • 2 teaspoons salt
  • 1 teaspoon Portuguese allspice
  • 2 tablespoons paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper

Step 1

This can be used to marinate a pork or beef roast for 24 hours before cooking. I add 1 tablespoon of tomato paste to the marinade and put it and the meat in a covered roaster with some potatoes and carrots at 325 F for 2 1/2 hours, or until the meat is tender.
Note:
The amount of vinegar and red pepper flakes can be adjusted to suit your taste. Some like it tarter or hotter.
