Ingredients

  • For Filling:
  • 1 packet yeast (about 1 tbsp)
  • 1 1/4 cups milk, room temperature
  • 1 1/4 tsp. vinegar
  • 3/4 cup potato starch
  • 1 1/4 cups constarch
  • 2 tbsp. sugar
  • 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 1/2 tsp xanthan gum
  • 1/2 tsp. salt
  • 1/4 cup oil
  • 2 tsp. cinnamon
  • 1/4 cup sugar

Preparation

Step 1

1. Preheat oven to 350F. In small bowl, combine yeast, milk and vinegar. Stir to dissolve yeast. Set aside.

2. In medium bowl, combine all dry ingredients. To dry ingredients, slowly add oil and milk/yeast/vinegar mixture. Mix well. Dough will look wet, thick and pasty. Set aside.

3. Combine sugar and cinnamon; set aside. Place approximately 1/3 dough in greased 9x4 loaf pan; sprinkle with 1/3 of cinnamon/sugar mixture. Continue layering until all dough and a bitof cinnamon/sugar mixture remains for the top of the loaf.

4. Wet hands and smooth out top of dough, then press an indentation along centre lengthwise of loaf. This will provide for a prettier loaf. Top with remaining cinnamon/sugar mixture.

5. Bake 25-28 minutes. Loaf will just begin to brown. Test for doneness with a long toothpick. Cool briefly before removing from pan. Refrigerate or freeze extra servings.
