Ingredients

  • 1-1/2 lb. flank steak
  • 1 can tomato sauce (8 oz.)
  • 1 envelope onion soup mix
  • 1 teaspoons Worcestershire sauce
  • 1 cup shredded potatoes
  • 1/2 cup chopped green onions
  • 1 can (8 oz.) green beans, drained

Step 1

Pound flank steak well with mallet to flatten and tenderize. Combine tomato sauce, soup mix and Worcestershire sauce in 1 cup measure. Spread half of tomato mixture in 8 x 8 dish. Place meat over mixture. Top with remaining tomato mixture. Cover. Marinate in refrigerator overnight. Scrape marinade from both sides of meat and put into 2 cup measure. Microwave on high 1 to 1-1/2 minutes until hot.

Combine potatoes and green onions in small bowl. Microwave on high 1-2 minutes or until hot. Stir in beans. Spread vegetable mixture on flank steak. Roll meat up jelly roll fashion securing with wooden picks. Place seam side down in 8 x 8" dish. Top with marinade. Cover with plastic wrap and microwave on high 5 minutes. Reduce power to 50% medium, microwave 20-25 minutes longer, turning seam side down and basting with marinade after 10 minutes. Let stand 5-10 minutes.
