Ingredients
- Turkey giblets and neck
- 4 Cups water
- 1/2 Cup margarine
- 1 small onion, chopped
- 1 celery rib chopped
- 1/4 Cup flour
- 2 egg yolks
- 1/2 Cup half and half
- 1/2 Teaspoon salt
- 1/2 Teaspoon pepper
- 1/2 Teaspoon poultry seasoning

Preparation
Step 1
Bring giblets, neck and water to a boil. Cover, reduce heat and simmer 45 minutes until tender. Drain and reserve broth. Chop giblets and neck; set aside.
Melt butter in large skillet, add vegetables and saute for 5 minutes. Add flour and stir. Add reserved broth and stir for 10 minutes. Reduce heat to low. Remove vegetables using strainer and discard.
Whisk together egg yolks and half & half. Stir about ¼ Cup of hot gravy into yolk mixture. Add remaining hot gravy. Add giblets, neck and stir for 4 to 5 minutes. Add salt, pepper, and seasoning.
