POTATOES****Claire Robinson's Twice Baked Rosemary Blue Potato Mash

This was very good - although these quantities made a HUGE amount for us - 8 servings. Would make a good company dish because of the make-ahead component, although it might be a bit too flavourful for a turkey dinner.
If making just for us, cut it down to one potato and adjust the remaining ingredients accordingly.

- 2 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- 1 cloves garlic, peeled and smashed
- 1/2 tablespoon finely chopped rosemary leaves
- Freshly cracked black pepper
- 2 extra-large Yukon gold potatoes, peeled and cut into chunks
- Kosher salt
- 6 tablespoons crumbled blue cheese (90 grams)
- 30 grams crumbled blue cheese for topping
- 2 tablespoons panko for topping

Preparation
Step 1
* *Oil* a shallow baking dish.
* In a small saucepan, *heat* the butter, oil, garlic, rosemary and pepper, to taste, until the butter is melted. *Allow* it to sit over very low heat to infuse flavors and keep hot while cooking the potatoes.
* In a large pot, *add* the potatoes, cover with water and add a heavy pinch of salt. *Bring* to a boil over medium heat, then reduce the heat and *simmer* the potatoes until fork tender, about 15 minutes. *Immediately drain* the potatoes and then put them back into hot pot over very low heat, to dry thoroughly. Next, *pass* them through a *food mill*, using the largest disk, over a bowl. If you don't have a food mill, you can hand mash or use a ricer.
* *Remove* the smashed garlic from warm butter and *whisk* in about 90 grams of the blue cheese until melted. By hand, *mix* the cheese sauce into the potatoes and *season* with a little salt and pepper, to taste. *Spread* into the prepared baking dish and *top* with remaining cheese (and a pit of panko, if desired).
* *Preheat* the oven to 350 and reheat the potatoes for 20 to 30 minutes, until hot throughout and cheese is melted and panko is golden. If necessary, *broil* about 3 minutes. *Remove* from the oven and serve.
