Ingredients

  • Crust:
  • 1 cup butter melted
  • 2 cups flour
  • 1 tsp vanilla
  • 2 eggs 2 eggs
  • 1 cup sugar
  • Filling:
  • 4 large eggs
  • 1/2 cup salted butter, melted
  • 1 whole regular lemon (medium-sized, zest, cut away pith, and slice to remove seeds)
  • 1 1/4 cups granulated sugar
  • splash of vanilla (optional)
  • powdered sugar for garnish

Step 1

Preheat oven to 350°F.

For the crust:
Mix listed ingredients together and spread on a greased quarter sheet pan (or 9x13). Use wet or buttered hands to spread mixture evenly.

For the filling, zest the entire lemon, cut the pith off the lemon and cut into sections so you can remove the seeds. Put the lemon, zest, eggs, butter, sugar and vanilla and blend until very smooth. You may still have some very small flecks of lemon rind – that’s great.

Bake at 350 for 20-30 minutes until filling is set. Let cool completely and dust with powdered sugar. Best refrigerated.
