Ingredients

  • 1 9-inch deep dish pie crust, frozen
  • 1 stick butter, melted
  • 2/3 cup granulated sugar
  • 2/3 cup raw oatmeal
  • 3/4 cup shredded coconut
  • 2 eggs, beaten
  • 2/3 cups dark corn syrup, such as Karo brand
  • 1 teaspoon vanilla

Preparation

Step 1

Pre-heat the oven to 350°F.

Melt the butter in the microwave, right in your mixing bowl. Add the sugar, oatmeal, coconut, eggs, dark corn syrup and vanilla and mix well.

Pour the mixture into the unbaked frozen pie crust.

Cover the edge of the pie crust with foil for the first 40 minutes to prevent the edges from browning too much.

Bake for about 50 minutes, or until the mixture does not jiggle in the middle. Then, just enjoy this delicious pie!
