Ingredients
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- Olive Oil
- 3-4 cups cooked chicken, chopped
- 1 can low fat cream of chicken soup
- 1 can low fat cream of mushroom soup
- 1 10 oz. can diced tomato and green chiles
- 1 tsp. chili powder
- 1/2 tsp. pepper
- 1/4 tsp. garlic powder
- 12 (6 inch) corn tortillas
- Mexican shredded cheese

Preparation
Step 1
Saute onion and bell pepper in large skillet in olive oil until tender. Stir in chicken and next 6 ingredients; remove from heat.
Tear tortillas in 1 inch pieces; layer 1/3 pieces in bottom of 12 x 8 baking dish coated w/cooking spray. Top with 1/3 chicken mixture and 1/3 cheese. Repeat layers twice.
Bake at 350 for 30-35 min. or until bubbly.
(freeze casserole up to 1 month -- thaw in refrig. overnite and bake as desired)
