Ingredients
- 1 oz butter
- sauerkraut for 2
- 6.5 oz white wine
- salt & pepper
- 4.5 oz creme fraiche (Trader Joe's sells it, but if you can't find creme fraiche, mix cream and cream cheese)
- chives
- 1 tsp honey
- 2 salmon fillets

Step 1
Melt butter. Add sauerkraut and wine and cook for 5 minutes.
Put the salmon in a colander on top of the sauerkraut, 5 minutes.
Drain the cooking liquid and boil on high heat to reduce.
Add the creme fraiche to the reduced liquid, add the chives, 2 Tbs of white wine and the honey.
Serve the sauerkraut with the salmon on top. Spoon the sauce over the salmon.
Serve with boiled potatoes.
