CHINESE CHICKEN WITH PLUM SAUCE 0 Picture

Ingredients

  • 4 chicken breast halves (2 whole) or 8 chicken thighs, skinned
  • 1 cup (250 mL) Oriental plum sauce (hot or mild - see note below)
  • 1/2 cup (125 mL) minced onion
  • 2 tablespoons (25 mL) lemon juice
  • 1 tablespoon (15 mL) soy sauce
  • 1 teaspoon (5 mL) grated lemon rind
  • 1/2 teaspoon (2 mL) each, dry mustard and ground ginger
  • 1/4 teaspoon (1 mL) each, pepper and liquid hot pepper seasoning
  • 1/4 teaspoon (1 mL) anise seed, crushed (optional but good)

Preparation

Step 1

Place chicken in 9 x 13 inch (3.5 L) baking pan. In a bowl, whisk together the plum sauce with remaining ingredients. Pour over chicken. Bake, uncovered, at 400 degree F (200 degree C) for 20 to 25 minutes for breasts; 30 to 35 minutes for thighs; baste chicken halfway through baking. Serve chicken with steamed rice and spoon sauce over top.
In warm weather, serve with tomato wedges and steamed snow peas sprinkled with shreds of fresh ginger. In cool months, serve with yam spears and snow pears or cooked carrot slices and Wilted Cabbage Salad.

NOTE: Instead of bottled plum sauce use 1 cup (250 mL) plum jam with 1 tablespoon (15 mL) soy sauce.

Serves 4 generously.
