Peach Cheesecake

This pie makes its own crust when baking. It's not traditional "pie"!

Ingredients
- CRUST :
- 3/4 c flour
- 1 t baking powder
- 1 vanilla pudding
- 1/2 c milk
- 1 egg
- 1/2 t salt
- 3 T butter
- 15 oz. can sliced peaches (drain and reserve juice)
- NOTE: If you're using fresh peaches, cut them up and sugar them before using in pie. About 2 cups of sliced peaches are needed. Let them sit for a while to form the juice, then drain and reserve the juice.
- FILLING:
- 2 8 oz. cream cheese
- 2 T juice from peaches
- 1 c sugar.
- TOPPING:
- 1 T sugar
- 1/2 t cinnamon

Preparation
Step 1
Preheat the oven at 350 degrees.
Mix together crust ingredients and put into greased 10" pie pan.
Drain juice from sliced peaches. Arrange over dough in pie pan. Combine cream cheese, reserved juice and sugar. Beat 2 mins.
Spoon over peaches to within 1" of edge.
Top with cinnamon sugar.
Bake at 350 deg. for 35 mins.
